Vegan Pumpkin Energy Bar

I have a LOVE of pumpkin and wanted to make some muffins.... but they didn't exactly fit in with my meal plan for the week. So I decided to make a modification of the Pumpkin Energy Bars from Veggie Gretchen posted on the delishhh.com website.

I am not a huge fan of a lot of oats, so I reduced the gluten-free oats and added in some of the Qia Buckwheat, Chia and Hemp cereal for a little extra nutritional something something. It can be really hard to find any healthy energy bars when you don't do soy, nuts, dairy... and so it's nice when I can find something that with my allergies I can make, and enjoy. And the fact that my daughter loves them as well makes them even better. 

How to make the vegan pumpkin energy bars

Ingredients:
1 can (15 oz) Eden Organic or soaked and cooked cannellini beans
1 cup Organic Pumpkin Pie Mix
½ cup Agave nectar
¼ cup Chopped dates (pitted)
½ cup Qia cereal
1 cup of gluten-free oats
½ cup Mama's coconut flour blend
½ cup quinoa flour
1 cup organic raisins

Directions:
1. In a food processor, combine beans, pumpkin, agave nectar, chopped dates until smoothie.
2. Add in Qia, oats, coconut flour and quinoa flour and pulse just to combine.
3. Pour into mixing bowl and add in raisins. You could also add in some Enjoy Life Chocolate chips if you are making it for the kids.
4. Spray your 13 x 9 pan with coconut oil spray, or rub with 1 tbsp of coconut oil.
5. Spread out mixture into the pan.
6. Bake at 350 degrees for 18 - 20 minutes.

This makes 12 Pumpkin Energy Bars.
